Chicken & Chorizo Jambalaya: A Delicious One-Pot Meal
Let’s face it folks, it gets a little monotonous making the same meals again and again. This is why most of us can benefit from an occasional cooking makeover. Last week, I made Chicken & Chorizo Jambalaya. If you want to enjoy the rich blend of chicken, chorizo, and vegetables, this dish is a must-try—a fantastic reminder of a cuisine from my childhood and a testament to its versatility!
Ingredients
- 7 tablespoons olive oil
- 2 chicken breasts, cut into cubes
- 1 onion, diced
- 1 red pepper, diced
- 2 garlic cloves, crushed
- 75g chorizo, sliced
- 1 tablespoon Cajun seasoning (about 7g)
- 250g long grain rice
- 400g can of plum tomatoes
- 350ml chicken stock
Instructions
Step 1: Brown the Chicken
In a frying pan with a lid, heat a tablespoon of olive oil over medium heat. Add the cubed chicken and cook for about 5-8 minutes until browned. Remove from the heat and set aside.
Step 2: Sauté the Vegetables
In the same pan, add the diced onion and cook for about 4 minutes until softened, creating a solid base for the dish.
Step 3: Add the Spices and Chorizo
Stir in the sliced chorizo, red bell pepper, minced garlic, and Cajun seasoning. Cover the pan and cook for another 5 minutes to let the flavors meld.
Step 4: Combine and Simmer
Add the chicken back to the pan, followed by the long grain rice, plum tomatoes, and chicken stock. Stir well, cover, and let it simmer for 20-25 minutes until the rice is tender and all the rich flavors are absorbed.
