Ingredients for Roast Beef with Red Wine

  • 2 kg topside of beef with some fat left on
  • 1 tablespoon vegetable oil or sunflower oil
  • 1 tablespoon dried English mustard
  • 1 teaspoon borough sea salt
  • 2 large carrots, halved vertically
  • 12 banana shallots, peeled and halved vertically
  • 2 bay leaves
  • 2 tbsp plain flour
  • 300ml full-bodied red wine (Shiraz blend)
  • 500ml beef broth
  • 2 tbsp redcurrant jelly

How to Make Roast Beef with Red Wine & Banana Shallots

1. Preparing the Beef for Roasting

Let the beef sit at room temperature for 1 hour before roasting. Preheat the oven to 220°C (200°C fan/gas mark 7). Pat the beef dry with kitchen paper, then rub oil all over the surface. Combine mustard powder, sea salt, and 1 teaspoon of pepper in a bowl, and rub it on the beef. Place halved carrots in a roasting tin to make a trivet, and lay the beef on top with the fat-side up.

2. Roasting the Beef

Roast the beef for 15 minutes at 220°C, then reduce the temperature to 180°C (160°C fan/gas mark 4). Roast for another 55 minutes for medium doneness, or 45 minutes for medium-rare. The internal temperature should reach 65°C.

3. Adding the Banana Shallots

With 30 minutes left, baste the beef with the fat in the tin. Add the shallots and bay leaves, coating them in the fat. Place everything back in the oven. Meanwhile, in a saucepan, reduce the red wine by two-thirds over medium heat.

4. Resting the Beef and Tenderizing the Shallots

Remove the beef from the oven, cover with foil, and let it rest. Increase the oven temperature to 200°C (180°C fan/gas mark 6) and cook the shallots for another 10-15 minutes until tender.

5. Preparing the Red Wine Gravy

Remove the shallots and keep them warm. Discard excess fat from the roasting tin, leaving 1 tablespoon of fat and all the juices. Stir in the flour and cook for 2 minutes. Gradually whisk in the reduced red wine, followed by the beef broth and redcurrant jelly. Bring to a boil and scrape up any bits from the tin. Add the resting meat juices, season with salt and pepper, and discard the carrots.

6. Serving Condiments with Roast Beef

Serve the roast beef with the rich gravy and tender banana shallots for a hearty and flavorful meal.
