Lamb Biryani with Cumin and Nigella Seeds

  • 400g lamb neck meat, cut into small cubes
  • 4 cloves garlic, crushed
  • 1 tsp finely grated ginger
  • 1 tbsp sunflower oil
  • 1 large onion, diced
  • 1 tbsp cumin seeds
  • 1 tbsp nigella seeds
  • 1 tbsp Madras spice paste
  • 200g basmati rice, rinsed and soaked
  • 8 curry leaves
  • 400ml good-quality chicken or lamb broth
  • 100g paneer, chopped into pieces
  • 200g spinach, cooked and water squeezed out

For Garnish

  • Chopped coriander
  • Green chilies, sliced into rings
  • Plain yogurt

How to Prepare Lamb Biryani with Cumin and Nigella Seeds

1. Marinate the Lamb

In a bowl, combine the lamb, crushed garlic, grated ginger, and a pinch of salt. Cover the bowl and refrigerate the mixture overnight or for several hours to let the flavors infuse.

2. Sear the Lamb and Prepare the Base

Heat the sunflower oil in a casserole dish over medium heat. Once hot, sear the lamb cubes for 5-10 minutes until browned on the edges. Add the diced onion, cumin seeds, and nigella seeds. Cook for 5 minutes until the onions begin to soften. Stir in the Madras spice paste and cook for another minute to release the flavors.

3. Add Rice and Broth

Stir in the soaked basmati rice and curry leaves, then pour the chicken or lamb broth over the mixture. Bring to a boil, then reduce the heat slightly and let it simmer. Meanwhile, preheat your oven to 180°C/160°C fan/gas mark 4.

4. Add Paneer and Spinach

Once the liquid has begun to boil, add the chopped paneer and cooked spinach to the dish. Season with a bit of salt and pepper to taste. Cover the dish tightly with foil, then place the lid on top to secure the contents. Bake in the preheated oven for 20 minutes.

5. Rest and Garnish

After cooking, remove the casserole dish from the oven and leave it to sit, still covered, for an additional 10 minutes. Bring the dish to the table, remove the foil and lid, and garnish with freshly chopped coriander and sliced green chilies. Serve with plain yogurt on the side.
