Ingredients for Chicken Noodle Soup
- 900ml chicken or vegetable stock (or Miso soup mix)
- 1 boneless, skinless chicken breast (approx. 175g)
- 1 tsp ginger, chopped
- 1 garlic clove, finely chopped
- 50g rice or wheat noodles
- 2 tbsp sweetcorn (canned or frozen)
- 2-3 mushrooms, finely sliced
- 2 spring onions, shredded
- 2 tsp soy sauce, plus extra for garnish
- Fresh mint or basil leaves and shredded chilli (optional), for serving
Step-by-Step Method
Step 1: Cook the Chicken
Pour the stock into a pan and add the chicken breast, ginger, and garlic. Bring the mixture to a boil, then lower the heat, cover partially, and simmer for 20 minutes until the chicken is tender.
Step 2: Shred the Chicken
Remove the chicken and place it on a cutting board. Use two forks to shred the chicken into small pieces. Return the shredded chicken to the pan along with the noodles, sweetcorn, mushrooms, spring onions, and soy sauce. Simmer for an additional 3-4 minutes until the noodles soften.
Step 3: Serve the Soup
Ladle the soup into two bowls and top with extra spring onions, fresh mint or basil leaves, and shredded chilli (optional). Serve with extra soy sauce on the side for additional flavor.
