Ingredients for Marinated Lamb Steaks with Butterbean Smash
For the Lamb Steaks
- 6 x 140g/5oz boneless lamb leg steaks
- 8 sprigs of fresh thyme
- 2 garlic cloves, thinly sliced
- 3 tbsp dry sherry
- 2–4 tbsp olive oil
- 2 x 250g punnets of cherry tomatoes (ideally vine-grown)
- 1 shallot, very thinly sliced
- 2 tsp paprika
- Rocket leaves, to serve
For the Butterbean Smash
- 1 mild chili, seeded and finely chopped
- 6 anchovy fillets in oil, drained
- 3 x 410g cans butter beans, drained and rinsed
- 20g flat-leaf parsley, roughly chopped
- 4 tbsp extra-virgin olive oil
- Juice of ½ lemon
Step-by-Step Instructions
Step 1: Marinate the Lamb Steaks
- Lay lamb steaks on a baking dish and sprinkle thyme and garlic cloves over the steaks.
- Season with salt and pepper, drizzle with dry sherry and 1–2 tbsp olive oil.
- Let the lamb marinate for at least 30 minutes to absorb the flavors.
Step 2: Prepare the Tomatoes
- Place the cherry tomatoes (still on the vine) on a separate baking sheet.
- Sprinkle the thinly sliced shallots over the tomatoes.
- Coat with 1–2 tbsp olive oil and season with paprika, salt, and pepper.
Step 3: Prepare the Butterbean Smash Base
- In a food processor, mix the chopped chili and anchovies to form a paste.
- Heat butter beans in a saucepan over boiling water and simmer until heated through.
- Retain the cooking liquid for later use.
Step 4: Roast the Lamb and Tomatoes
- Preheat your oven to 200°C (fan) / 220°C (conventional) / gas mark 7.
- Place the lamb tray above the tomato tray in the oven if not using a fan oven. Roast both trays for 15–20 minutes, to your liking.
- Remove from the oven and let the lamb rest for 5–10 minutes before serving.
Step 5: Finish the Butterbean Smash
- Put the butter beans into the chili-anchovy paste in the food processor. Blend until coarsely chopped.
- Add in parsley, olive oil, lemon juice, salt, black pepper, and 4 tbsp of the reserved bean liquid. Blend again to create a rough but creamy mash. Adjust texture by adding more liquid if needed.
Step 6: Serve Your Dish
- Place a lamb steak on each plate with a large scoop of butterbean smash.
- Pour the contents of the roasted tomatoes over the lamb.
- Garnish with fresh rocket leaves for a colorful and spicy touch.
