Recipe with Cheese – Quick and Easy to Prepare
Ingredients
- 4 tablespoons of olive oil
- 1 onion (chopped)
- 2 cloves of garlic (crushed)
- Chilli flakes (to taste)
- 1 can of tomatoes
- 1 teaspoon of caster sugar
- 6 tablespoons of mascarpone cheese
- 4 skinless chicken breasts, cut into strips
- 300 grams of penne pasta
- 70 grams of cheddar cheese (grated)
- 50 grams of mozzarella cheese (grated)
- Finely chopped parsley
Method
Step 1: Prepare the Sauce
Heat 2 tablespoons of olive oil in a pan over medium heat. Add the chopped onion and cook gently for 10-12 minutes. Then, add the garlic and chilli flakes, stirring for 1 minute. Add the canned tomatoes, caster sugar, and seasoning. Let the mixture simmer uncovered for 20 minutes, allowing it to thicken. Finally, stir in the mascarpone cheese until the sauce is smooth and creamy.
Step 2: Cook the Chicken
In a separate non-stick frying pan, heat 1 tablespoon of olive oil over medium heat. Season the chicken strips, then fry them for 5-7 minutes or until fully cooked through.
Step 3: Assemble and Bake
Preheat your oven to 220°C (200°C fan/gas mark 7). Cook the penne pasta according to package instructions, then drain and mix with the remaining olive oil. In a medium-sized ovenproof dish, combine the pasta, cooked chicken, and sauce. Top with grated cheddar, mozzarella cheese, and chopped parsley. Bake for 20 minutes or until golden brown and bubbling on top.
