Ingredients for Mexican Beef Chili

  • Up to 6 tbsp sunflower oil
  • 4 kg stewing beef, cut into chunks
  • 4 white onions, sliced
  • 4 tbsp chipotle paste
  • 8 garlic cloves, crushed
  • 50g fresh ginger, grated
  • 1 tbsp ground cumin
  • 2 tsp ground cinnamon
  • 1 tbsp plain flour
  • 2 liters of beef stock
  • 3 x 400g cans chopped tomatoes
  • 1 tbsp dried oregano
  • 5 x 400g pinto or kidney beans, drained

How to Make Mexican Beef Chili

Step 1: Prepare and Brown the Beef

Pour a little sunflower oil into a very large sealable pot and heat. Add small portions of beef, browning all sides. Add more oil if needed. Once browned, remove from heat and set the beef aside.

Step 2: Cook the Onions

Add 1 tablespoon of oil and the sliced onions to the pot. Let them cook over medium heat until golden, about 7-10 minutes.

Step 3: Add Spices and Aromatics

Stir in the chipotle paste, garlic, ginger, and cinnamon. Cook gently for another 2 minutes to allow the flavors to blend.

Step 4: Add Stock, Tomatoes, and Other Spices

Gradually pour in the beef stock while stirring. Add the chopped tomatoes, dried oregano, salt, and pepper. Let it simmer on low heat for 10 minutes.

Step 5: Add the Beef and Simmer

Return the browned beef to the pot, cover, and let it simmer gently on low heat for 1 hour and 45 minutes, or until tender. For the last 15 minutes, remove the lid and add the drained beans.

Step 6: Adjust Sauce Thickness and Seasoning

If the sauce is too thin, let it simmer uncovered for a few extra minutes to thicken. Taste and adjust the seasoning as needed before serving.

Serve hot with garlic bread, fresh salsa, and a sprinkle of fresh cilantro for added flavor.
