Ingredients for Cajun Chicken Pasta
- Olive Oil: 1 tbsp
- Chicken Breasts: 400g, cut into large pieces
- Garlic: 3 cloves, mashed or grated
- Cajun Seasoning: 2 tbsp
- Canned Tomatoes or Tomato Puree: 400g can
- Chicken Stock: 1 cube, crumbled
- Pasta: 500g of Penne or any Tube Pasta
- Double Cream: 150 ml
- Parsley and Parmesan: 20g finely shredded and more for garnish
- Lemon: Juiced half of a lemon
- Chopped Parsley: To garnish (optional)
Step-by-Step Method
Step 1: Chicken Preparation
Heat 1 tbsp of olive oil in a wide shallow or deep pan over medium heat. Add the chopped pieces of chicken, add salt and pepper, then toss them in. Fry for 6-8 minutes, stirring occasionally, until the chicken takes on a golden brown color all over. Note that at this time, it is not necessary for the chicken to be cooked through.
Step 2: Add Garlic and Cajun Seasoning
Add the chopped garlic and sauté it for an additional 2 minutes, which allows the garlic to release its flavor. Apply the chicken’s seasoning by covering the meat with the well-blended sprinkle mixture. Add the tomatoes, a quarter of a can of water, and the chicken stock cube to the mixture. Combine everything together, bring the temperature to a simmer, then allow it to cook for 5 minutes.
Step 3: Cook the Pasta
In the meantime, fill a large pot with salted water and bring it to a boil. Then add the pasta, cooking it for one minute less than what is stated on the packet. Once the pasta has completely cooked, ladle out the water but keep the pasta warm in a bowl.
Step 4: Combine Pasta and Sauce
While the chicken mixture continues to simmer, pour in the double cream. Once done, add the already cooked pasta into the pan, mixing it with the sauce while trying to distribute it uniformly. Cook the noodles in the sauce for another 2 minutes on low heat. Toss in some finely shredded Parmesan cheese and lemon juice, before turning the heat off. Let it cook for one more minute.
Step 5: Serve
Serve and enjoy the Cajun Chicken Pasta right away from the pan or place it in a big bowl if you want. For the final garnishing, sprinkle some chopped fresh parsley and more Parmesan cheese for extra taste.
Preparation Tip: Storing the Cajun Chicken Sauce
If you have leftovers, this seasoned chicken sauce is a good candidate for freezing. Let the sauce cool down before putting it in a freezer-proof container. This will last for up to 3 months. To reheat, let it sit out to defrost completely and then heat it up until hot. This makes a great, simple dish on busy days!
